For Meatless May Day 10 we are bringing you a mushroom meatloaf recipe courtesy of  Tasting Table.

Meatloaf is a food that either you love it or you don’t. For those of you that love meatloaf here is a vegetarian version for you.

vegetarian meatloaf

Here are the ingredients:

4 ounces (Four 1/2-inch slices) sourdough bread, sliced and crust removed
1 cup almond milk
3 tablespoons olive oil, plus more for greasing
1 yellow onion, finely chopped
2 pounds mixed mushrooms, finely chopped
1 cup ketchup, divided
1 tablespoon minced sage
1 tablespoon minced thyme
1 tablespoon minced oregano
2 garlic cloves, minced
1 cup walnuts, coarsely ground in a food processor
½ cup instant oats
½ cup dry bread crumbs
2 tablespoons kosher salt
2 tablespoons lemon juice
½ tablespoon freshly ground black pepper
1 teaspoon lemon zest
2 eggs, lightly beaten
