It’s Monday and that means back to work and school. Don’t fret! For Day 7 we are bringing you a Vegetarian Sloppy Joe’s recipe courtesy of Izzy over at She Likes Food.

This recipe is simple to make. You may substitute by using your favorite brand of BBQ sauce instead of making the BBQ sauce in the recipe.

Here are the ingredients:

1/2 cup dry green lentils
1 -15 ounce can cooked chickpeas, rinsed and drained (1.5 cups)
Coleslaw for topping, if desired
Hamburger buns, I used Udi’s gluten free

BBQ Sauce:

1 teaspoon olive oil
1 small shallot, diced (about 1/4 cup)
2 small cloves garlic, minced
1 cup tomato sauce
1 tablespoon ketchup

1 teaspoon tamari
3/4 teaspoon smoked paprika
1/2 teaspoon mustard powder
1 teaspoon chili powder
1/4 teaspoon ground cumin
1/4 teaspoon salt
1/8 teaspoon black pepper
